There are countless ideas for cheesecake, but this one with plums stole my heart. It's a simple yet quite unusual combination since plums more often end up in yeast or shortcrust cakes rather than as an addition to cheese filling. However, it's worth trying this combination because plums and cheesecake just complement each other perfectly.
Cheesecake with plums
Autumn is all about plums, so it's worth taking full advantage of the season. Cheesecake with these fruits will impress even the pickiest connoisseurs of sweets. At the same time, it's simple to prepare, so you don't need to stress about baking it.
Ingredients:
- 3 eggs
- 7 tablespoons vegetable oil
- 1/2 cup sugar
- 1.5 teaspoons baking powder
- 1.5 cups all-purpose flour
Cheese filling:
- 6 egg whites
- 2.2 pounds cheesecake quark
- 1 cup sugar
- 2.5 tablespoons potato starch
Plums:
- 10 ounces plums
- 3 tablespoons raspberry pudding
- 1 teaspoon cinnamon
Crumble:
- 5 ounces butter
- 3.5 ounces sugar
- 5.3 ounces all-purpose flour
Instructions:
Step 1: Start with the base. Crack the eggs into a bowl, add sugar, and mix until light and fluffy. Add the baking powder, pour in the oil, and mix well.
Step 2: Add flour to the mixture and mix thoroughly to avoid any lumps.
Step 3: Move on to the cheese filling. Whip the egg whites until stiff peaks form. Gradually add sugar, potato starch, and the cheesecake quark, mixing well.
Step 4: Halve the plums and remove the pits. Add the raspberry pudding and cinnamon, and mix together.
Step 5: Prepare the crumble. Pour the melted butter into a bowl and combine it with sugar and flour, kneading into a crumbly mixture.
Step 6: Line a baking pan with parchment paper. Pour the egg and flour mixture in and smooth it out. Then add the cheese filling. Arrange the plums on top, sprinkle with crumble, and place in an oven preheated to 340°F. Bake for an hour.
Step 7: Sprinkle the baked and slightly cooled cheesecake with powdered sugar and cut into portions. Enjoy!
