When discussing flavors and aromas associated with autumn, this dish is definitely in my top 3 list. Perfect for breakfast, dessert, dinner, a snack for work, or something quick to put on the table when there's no time to bake. Let plum pancakes make themselves at home in your kitchen, and you will be rewarded with smiles.

Quick plum pancakes. An autumn hit

We love pancakes, and these beautifully risen ones, almost resembling doughnuts, are our pride and joy. However, we don’t always have the time to prepare yeast dough for pancakes, so we take shortcuts and simply use baking soda or baking powder instead. The effect isn’t the same, but these cute, crispy small pancakes have also successfully settled into our kitchens.

These quick little pancakes are exactly what I love to prepare in autumn, when it’s gray outside, and my plate is filled with warmth and warm colors. Warming soups, aromatic meats, and desserts wrapped in a blanket of spicy aromas are exactly what most of us need in autumn to fend off those sneaky autumn blues. That’s why delicious plum pancakes, made with a fruit that wonderfully fits in autumnal compositions, are a perfect start to the day or an even better end to it. And making them is a breeze.

Plum pancakes. Recipe

Ingredients:

                                  
  • 8 plums
  • 1 1/4 cups of all-purpose flour
  • 1 tablespoon of sugar
  • 1/2 teaspoon of baking soda
  • 3/4 cup of milk
  • 1 egg
  • canola oil or clarified butter for frying
  • powdered sugar, cinnamon, and sour cream for serving

Preparation:

                      
  1. Wash the plums thoroughly and dry them, then remove the pits and cut the fruit into not-too-thick slices.
  2. Sift the flour, add sugar and baking soda. Mix everything.
  3. Add milk and egg. Mix the ingredients with a whisk until you get a smooth batter. Finally, add the plums and mix everything again.
  4. Fry the pancakes in hot oil or butter on both sides until golden. Remember to gently stir the batter each time you scoop it with a spoon.
  5. Serve the plum pancakes with powdered sugar mixed with cinnamon and a dollop of sour cream.
