Sift about 1.1 pounds of wheat flour onto a pastry board, creating a mound with a well in the center. Mix olive oil (about 2.5 ounces) with warm water (about 9 fluid ounces), fresh yeast (about 0.4 ounces), and sugar (about 0.4 ounces). Let it sit for a few minutes, then add to the flour. Add 0.4 ounces of salt and knead the dough until smooth. Let it rise for two hours. Afterward, divide the dough into 8-10 parts and shape them into rounds. Sprinkle with coarse sea salt and dried herbs (thyme, rosemary), then press olives, cherry tomatoes, or pieces of feta into the dough. Cover with a cloth, rest for 30-40 minutes, then place in an oven preheated to 400°F. Brush with water and olive oil and make indentations with your fingertips to help it rise evenly. Bake for 20-25 minutes until the focaccia is golden brown.
