This recipe is inspired by khachapuri. Typically, an egg and a mix of Georgian cheeses are the heart of this bread, but here, the base is phyllo dough. This incredibly thin, yeast-free layered dough is the foundation of many delicious dishes in Balkan and Mediterranean cuisine. The name "phyllo" comes from Greek and means "leaf," which perfectly reflects its delicate, paper-like structure. This recipe works wonderfully, enveloping the egg and cheese filling.

Crispy phyllo dough nests

This impressive recipe is not difficult to prepare. It works great for breakfast, lunch, or dinner. You can serve it as a main dish or as an appetizer. There are many options, so it's worth having this recipe on hand, especially when phyllo dough catches your eye at the store.

Ingredients:

                                  
  • 8 sheets of phyllo dough
  • 4 ounces of melted butter
  • 7 ounces feta cheese
  • 10 ounces shredded mozzarella
  • 13 ounces chopped spinach
  • 2 teaspoons dried garlic
  • 4 eggs
  • 1.4 ounces almond flakes

Instructions:

Step 1: Brush a sheet of phyllo dough with melted butter. Lay a second sheet and sprinkle it with shredded cheese, feta, and spinach.

Step 2: Sprinkle with dried garlic and gather the edges to form a nest. Place on a baking sheet lined with parchment paper.

Step 3: Drizzle with melted butter and place in an oven preheated to 350°F for 20 minutes. After this time, remove from the oven and crack an egg into each nest. Sprinkle with almond flakes and bake for another 8 minutes. Enjoy!
