Feel free to experiment with this recipe. I often add cinnamon to the apples, but cardamom or vanilla make great alternatives. While I prefer walnuts, almonds or other nuts can be just as delicious. No matter what, you—and your guests—will be delighted with the outcome.
Apple pie in Glasses
Ingredients:
- 5 sweet apples,
- 2 tablespoons of honey,
- 2 tablespoons of lemon juice,
- 1 teaspoon of cinnamon,
- roughly 1 1/4 cups of 30% cream,
- about 3.5 ounces of mascarpone cheese,
- 3 tablespoons of powdered sugar,
- approximately 10.5 ounces of ground cookies,
- 3 tablespoons of ground walnuts.
How to prepare:
- Peel, wash and cube the apples. Place them in a pot, adding the cinnamon, honey, and lemon juice—stew for about 20 minutes or until the apples fall apart.
- Divide the cooked apples into two portions and let cool. Then, blend one portion into a puree.
- Mix the cream and mascarpone cheese in a separate bowl with the powdered sugar. Finely grind the walnuts and cookies.
- To assemble the dessert, begin with two tablespoons of ground cookies in each glass. Follow with two tablespoons of stewed apples and a layer of the cream mixture. Add another layer of ground cookies, then some of the apple puree. Finish by garnishing with ground walnuts.
- Refrigerate the prepared apple pie in glasses for about an hour and a half before serving. Enjoy!
