Cheesecakes are a familiar delight in our homes. We bake them routinely, and they often take center stage during holidays or family gatherings. While their traditional flavor is beloved, exploring a new twist is sometimes refreshing. That's when I introduce the delightful cheesecake with added yogurt. It's plush, tender, and remarkably delectable. It pairs flawlessly with a steaming cup of coffee or cocoa during those cool autumn-winter evenings.

The Yogurt Cheesecake

Including Greek yogurt lends a certain lightness to this baked delight, rendering it even creamier and more decadent. Yes, it might be a bit lighter, but calorie-counting and desserts like these do not belong in the same sentence. The taste is phenomenal, and you can always bet on its perfection. I once passed this recipe to a somewhat baking-challenged friend, yet she nails it each time.

Ingredients:

For the dough:

  • 1½ cups of potato flour,
  • ½ cup of sugar,
  • 1 egg yolk,
  • 4.4 oz of butter,
  • 2 tablespoons of 18% cream,
  • 1 teaspoon of baking powder.

For the cheese filling:

  • 28.2 oz of cottage cheese,
  • 28.2 oz of Greek yogurt,
  • 1 cup of sugar,
  • 2 packets of vanilla sugar,
  • 4 eggs,
  • 2 packs of pudding.

Preparation:

  1. In a bowl, combine flour, butter, and sugar to create a crumble. Refrigerate this for an hour.
  2. In a food processor, blend cottage cheese, sugar, yogurt, and eggs.
  3. Add pudding to the mixture and stir with a spoon.
  4. Line a 9.8x9.8 inch baking tray with baking paper and sprinkle 2/3 of the crumble at the bottom.
  5. Bake in a preheated oven at 356 degrees Fahrenheit for about 15 minutes or until the crumble turns golden brown.
  6. Layer the cheese mixture on top and sprinkle with the remaining crumble.
  7. Bake at 320 degrees Fahrenheit for about 60 minutes or until it turns golden brown.
  8. Allow it to cool in a mildly opened oven.

From cold to warm, the cheesecake is delightful at any temperature. For extra flair, decorate it with your favorite fruits or a drizzle of chocolate sauce.
