Mini cheesecake recipe

We'll start with the crust to make mini cheesecakes, which gives the dessert structure and crunch.

Ingredients for the crust:

  • 3.2 oz crackers (can be classic butter, whole grain, or gluten-free)
  • 1.4 oz butter

Ingredients for the cheesecake filling:

  • 17.6 oz cottage cheese from a tub, semi-fat double-milled cottage cheese, or quark
  • 3.5 oz sugar
  • Zest of ½ lemon
  • 2 eggs
  • ½ package of sugar-free vanilla pudding mix (for 16.9 fl oz of milk)

Additional decorations (optional):

  • A few fresh strawberries
  • Strawberry jam or another fruit-compatible jam
  • Mint leaves

Prepare the crust:

  • Crush the crackers finely (preferably in a food processor or blender).
  • Melt the butter and mix it with the crushed crackers.
  • Line muffin cups within a muffin tray.
  • Spread the cracker-butter mixture at the bottom of the cups and press down.
  • Set the tray aside.

Prepare the cheesecake filling:

  • Blend the cottage cheese, sugar, lemon zest, eggs, and pudding powder until smooth.
  • Spoon the cheesecake filling into the cups.

Bake the mini cheesecakes in a preheated oven for about 25 minutes at 350°F. After baking, turn the oven off and let the cheesecakes cool with the oven door open. Then, set them in the refrigerator for a few hours to cool and set.

You can decorate the finished mini cheesecakes with fresh strawberries, jam, or mint leaves to give them a more appealing look and additional flavor.
