How to prepare pancakes in Mexican style?

The real sensation comes from the filling, which combines all the best elements of Mexican cuisine: well-seasoned beef with crunchy vegetables.

Pancakes are worth baking

These pancakes taste great with sauces. A tomato sauce would be perfect. Once all the pancakes are filled with the stuffing, you can place them in a baking dish and bake them in the oven. Additionally, it's worth pouring sauce over them and sprinkling cheese on top. Prepared this way, they become even more filling.

Mexican style pancakes

Ingredients for pancakes:

  • 2 cups of all-purpose flour
  • 2 eggs
  • 2 cups of milk
  • 1.5 cups of sparkling water
  • A pinch of salt
  • A tablespoon of oil

Ingredients for stuffing:

  • 1 onion
  • 1 red bell pepper
  • 2 cloves of garlic
  • 7 oz of ground beef
  • 1 teaspoon of hot paprika powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of sweet paprika
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • A tablespoon of oil
  • 9 oz of grated cheese

Instructions:

  1. Start by preparing the pancake batter. Place all the ingredients in a bowl and mix thoroughly to avoid lumps.
  2. Let the batter rest for 20 minutes, then fry the pancakes in a heated pan.
  3. Prepare the stuffing: heat oil in a pan, add chopped onion, chopped bell pepper, and minced garlic. Sauté until the ingredients are translucent.
  4. Add the meat and cook until it turns brown.
  5. Add the spices and mix thoroughly.
  6. Place a portion of stuffing on each fried pancake, sprinkle with grated cheese, and wrap.
  7. Fry the finished pancakes on the pan so that the cheese melts, or bake in the oven with tomato sauce and cheese.
