Ariel's shell meringues

Ingredients:
Meringue:
- 6 egg whites
- 10.5 oz (300 grams) sugar
- 1 tablespoon potato starch
- 1 tablespoon lemon juice
Cream:
- 3/4 cup (6.8 oz or 200 ml) heavy cream (30%)
- 8.8 oz (250 grams) mascarpone
- 3 tablespoons powdered sugar
Fruits:
- raspberries
- blackberries
- mint leaves
Preparation:
Step 1. Place the egg whites in a large bowl and beat until stiff, gradually adding the sugar. The mixture should be glossy and thick, with the sugar fully dissolved. This ensures the meringue is perfectly crispy.
Step 2. Turn the muffin tin upside down. Transfer the beaten egg whites to a piping bag and pipe shell shapes onto the muffin molds. Bake in an oven preheated to 195°F (90°C) for 90 minutes.
Step 3. Whip the chilled cream. Add the mascarpone and powdered sugar, and mix well. Transfer to a piping bag and pipe onto half of the baked and cooled meringues.
Step 4. Add fruits and sugar pearls, and cover with a dry meringue. Enjoy your delicious Ariel-style dessert!
