Mega meatloaf: Savor a hearty Roman roast weekend feast

Here's an idea for a roast you can prepare when you're in the mood to diversify your home lunch menu. It's delicious, moist, perfectly seasoned, and extremely filling. I guarantee the whole family will be satisfied!

Mega Meatloaf, despite its name, is not the latest action movie starring Jason Statham, but a dish that you'll find incredibly useful. Why? Well, besides being ridiculously simple to make, its size is large enough to have lunch covered for the whole weekend. Doesn't that sound wonderful?

So, it's meatloaf or — if you prefer professional terminology — Roman roast. The main star of this dish, of course, is ground meat. For this recipe, I've chosen pork, but there's nothing stopping you from using poultry, such as turkey. It's worth adding simple ingredients like parsley, onion, and a handful of mushrooms. That's all it takes for a delicious and nutritious lunch. Check out how simple it is.

Mega Meatloaf: Roman roast with onion and mushrooms

Ingredients:                    

  • 2 lbs of ground pork shoulder
  • 2 eggs
  • 5 oz of mushrooms
  • 2 garlic cloves
  • 1 onion
  • 1 bunch of parsley
  • 2 stale rolls
  • 3 tablespoons of breadcrumbs
  • Salt
  • Pepper
  • Butter

Cooking Instructions:            

  1. Melt a small amount of butter in a pan. Add diced onions, and after a moment, add chopped mushrooms. Then remove from the heat.
  2. Transfer the ground meat to a large bowl.
  3. Add chopped parsley, rolls soaked in water and squeezed, garlic cloves pressed through a garlic press, and the previously sautéed ingredients.
  4. Crack in 2 eggs, season with salt and pepper, and mix everything thoroughly.
  5. Form a loaf from the resulting mixture. You can also divide it into 2-3 parts to make smaller roasts.
  6. Place on a greased baking sheet and put it in the oven preheated to 410°F. Remove after about 60 minutes.
  7. Meanwhile, consider adding potatoes to the roast. Then you've almost made a whole meal in one go. Enjoy your meal!
