Meatballs are an important dish on our menu. We know them from childhood because they can be easily prepared in a delicate version. The most popular is with dill sauce, and we also prepare them Italian-style with tomato sauce. Need a change? Use carrots for the sauce.

Meatballs are a delicious idea for dinner

Meatballs can be prepared from many types of meat, but poultry is the best for carrot sauce. They taste great with cooked rice, groats, pasta, or potatoes, but serving them with a piece of bread is enough to make a hearty meal. They are perfect for a delicious dinner for the whole family and taste good when reheated.

Why is it worth eating carrots?

Carrot is a vegetable that we reach for almost every day. The most popular salad? Simply grate the carrot. We add it to almost every soup. In the fall, carrot cake is also popular. But a sauce? It's worth including it on the menu. The impact of carrots on health is significant. They are rich in numerous nutrients, such as beta-carotene, which converts into vitamin A, supporting eye health. Regular consumption can help prevent cancer, improve skin condition, and strengthen the immune system.

Meatballs in carrot sauce

Ingredients:

  • 1.1 lb ground meat
  • 2-3 tablespoons breadcrumbs
  • 1 egg
  • 1-2 tablespoons Greek yogurt
  • 1 onion
  • 1 clove of garlic
  • Salt, pepper, paprika, Herbes de Provence to taste

For the sauce:

  • 3 medium-sized carrots
  • 1 onion
  • 2 cups broth
  • 5 tablespoons 30% cream
  • 1 clove of garlic, optional
  • Salt, pepper, curry, ginger, turmeric, cinnamon to taste
  • Parsley or cilantro, optional, for serving

Instructions:

  1. Add finely chopped onion and garlic to the meat. Add the remaining ingredients and knead the mixture thoroughly.
  2. Season it to taste, then form small balls. Fry the meatballs in preheated oil until they are browned.
  3. Start preparing the sauce by frying finely chopped onion with finely chopped or grated carrots. Season to taste and add garlic.
  4. Pour broth over the vegetables and stew until soft. Then, blend until smooth. If it is too thick, add water or broth.
  5. Place the meatballs in the sauce and heat for a few minutes. Finally, add cream to the sauce.
  6. Serve the meatballs in sauce with your favorite sides. Sprinkle with finely chopped cilantro or parsley.
