Meatball magic: Elevate your barbecue with easy grilled delights

Pork neck, sausage, and blood sausage are grilling classics that everyone loves, although kids often have their complaints. Keeping them in mind, I started preparing meatballs, and it quickly turned out that they taste great to people of all ages. They are delicious and well-seasoned.

When we invite friends over for a barbecue, we usually stick to a well-known menu. Sausage or blood sausage is always a hit, and pork neck or chicken fillets have become second nature to us. However, we tend to hesitate a bit when it comes to ground meat, which we don't use as frequently for grilling.

What ground meat to choose for grilling?

Ground meat is perfect for grilling. The best example, of course, is burgers, where Americans truly excel. Ground meat is also commonly used in the Balkans; the famous koftas are skewers made of ground meat with a touch of oriental spices, prepared on the grill. You can grill dishes made from ground beef, pork, and even poultry.

Serve meatballs with a refreshing salad

If you're new to preparing dishes from ground meat on the grill, try starting with meatballs. The recipe is very straightforward. Another significant aspect of this dish is that it doesn’t require marinating. It's worth using freshly ground meat or requesting it at the store. Grilled meatballs taste best when served with Greek tzatziki sauce or our traditional cucumber salad.

Grilled Meatballs

Ingredients:

  • 1 lb of ground meat (beef, pork, poultry, or a mix)
  • 2 cloves of garlic
  • 1 egg
  • Salt and pepper to taste
  • Paprika and preferred spices to taste
  • A few sprigs of parsley
  • Oil
  • Flour or breadcrumbs for thickening

Preparation Method:

  1. Take the meat out of the fridge to bring it to room temperature.
  2. Finely chop the parsley.
  3. Add the egg, press the garlic through a crusher, and season to taste. Mix the mixture by hand, and add the parsley at the end.
  4. If the mixture is too runny, thicken it with flour or breadcrumbs.
  5. Wet your hands and form the meatballs.
  6. Place them on a tray and brush each with oil.
  7. Grill them on a hot grill for about 10-15 minutes, turning them occasionally.
