Mozzarella – The cheese that has garnered millions of hearts

Mozzarella is a curd cheese, born in Italy. The original mozzarella was made from buffalo milk. Today, cow's milk is used since it brings about a gentler flavor in the cheese.

We have the ancient Romans to thank for this cheese. The delicacy quickly gained popularity, and by the 20th century, it was well-known throughout Europe. Mozzarella is light, distinctly milky, and very elastic, making it one of the crucial ingredients in Italian dishes like pizza or lasagna.

While it may not be commonly known, you can actually make mozzarella at home. There's no need for whey or specialized cheesemaking equipment. The only unusual ingredient you'll need is rennet. You can easily purchase it online. A bottle costs roughly 11 zlotys, and once you've tried this recipe, you'll find yourself reaching for it again. Homemade Mozzarella Recipe

Ingredients:

  • 0.528 gallons of whole milk,
  • 1/4 teaspoon of rennet,
  • 3/4 teaspoon of citric acid.

Instructions:

  1. Pour 120 ml of water into a pot and heat it up. Stir in the citric acid.
  2. Add the milk and warm it to 89.6°F.
  3. Dissolve the rennet in 1/3 cup of warm water and add it to the milk. Stir everything thoroughly and let it stand, covered, for 5-7 minutes. Cut the resulting curd with a knife in the pot.
  4. Heat this prepared mixture to 104°F, stirring until it thickens.
  5. Once the temperature reaches 104°F, remove from heat and transfer the cheese to a sieve. Press it and heat it in the microwave. The cheese should be very hot, making it flexible.
  6. Shape it and then immerse it in a bowl filled with cold water. Your homemade mozzarella is ready - enjoy your meal!
