The curd cheese originating from Lombardy has one serious drawback: it is very fatty. That's why pancakes made from it shouldn't be a daily part of your diet. However, this shouldn't worry parents and all those who quickly get bored and like to serve varied breakfasts. These pancakes can play the role of an interesting change. Maybe even a reward? Quick mascarpone pancakes
Ingredients:
- 1/2 pack of mascarpone (about 4.4 oz)
- 1 cup all-purpose flour
- 1/2 cup milk
- 2 eggs
- 2 teaspoons vanilla sugar
- 2 teaspoons baking powder
- 2 tablespoons vegetable oil
- several tablespoons of homemade strawberry jam
Preparation:
- I transfer the mascarpone to a bowl. I add all-purpose flour, milk, vanilla sugar, and baking powder. I crack the eggs and mix everything into a smooth cream using a hand blender. If I have time, I let the batter rest for 20 minutes. Finally, I added the vegetable oil.
- Since this mixture is sufficiently fatty, I put portions of the prepared batter on a hot, dry skillet. I fry until golden brown on both sides. I serve it with homemade jam or a bit of natural yogurt. Done!
