Ingredients:

  • 3 large chicken breasts
  • 2 ounces of all-purpose flour
  • 1 ounce of olive oil
  • 1 ounce of butter
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 ounces grated parmesan
  • 1 teaspoon chili flakes (optional)
  • ⅓ cup chopped sun-dried tomatoes
  • oregano, thyme
  • fresh basil
  • salt, pepper

Preparation:

  1. Cut the chicken breasts into smaller fillets, preferably cutting them in half. Then, dredge them in flour.
  2. Sauté the meat in the heated olive oil and butter. It takes just 5 minutes on each side. Then, set the meat pieces aside on a plate.
  3. In the same pan, sauté the chopped garlic, and add the broth. Then deglaze the pan: turn the heat to high and scrape off any bits stuck to the bottom with a wooden spoon.
  4. Reduce the heat and add the cream and grated parmesan. Cook the sauce for a few minutes. Season the sauce with chili flakes, thyme, oregano, salt, and pepper. Also, add the sun-dried tomatoes.
  5. Finally, place the chicken into the sauce and cook until the sauce thickens and the chicken is ready.
  6. Garnish with chopped fresh basil leaves and serve warm with pasta or rice.
