How to make potato pancakes without a grater?

The right equipment is key to success in this potato pancake technique. A jug blender with an ice-crushing function is one of the better choices for making the batter. If using a hand blender, the potato pieces should be quite small; otherwise, the entire process will take longer.

Ingredients:          

  • 2.2 lbs of potatoes
  • 1 onion
  • 2 eggs
  • 3-4 tablespoons of all-purpose flour
  • Salt and pepper (to taste)
  • Vegetable oil (for frying)

Preparation:

  1. Preparing the potato batter: Peel and cut the potatoes into smaller pieces to make them easier to blend. Peel the onion and cut it into quarters. Put the potatoes and onion in a blender or food processor and blend until smooth. If the batter is too watery, drain the excess liquid. Transfer the potato batter to a large bowl. Add the eggs, flour, salt, and pepper. Mix thoroughly until the ingredients are well combined.
  2. Frying the pancakes: Heat vegetable oil in a large skillet. Spoon portions of the potato batter onto the skillet, forming round pancakes. Fry the pancakes until golden brown on both sides, about 3-4 minutes per side. Drain the fried pancakes on a paper towel to remove excess oil.
