Ingredients:
- 6-8 herring fillets in oil
- 4-6 large beets
- 4 potatoes

Sauce:
- 2 cups of sour cream
- 1 jar of Russian mustard
- Sugar, salt, and pepper to taste
Instructions:
- Boil potatoes, beets, and celery in their skins until they are soft. A fork should easily pierce the skin.
- Peel and dice them.
- Peel and dice the apples. Do the same with the herring.
- Chop the mushrooms and onion into smaller pieces.
- Transfer all ingredients to a large bowl, drizzle with oil, and let sit overnight so the flavors can meld.
- Mix the sour cream well with mustard, season with salt and sugar, and pour into the salad.
- Mix thoroughly so the sauce coats all the ingredients. If necessary, season with salt, pepper, or sugar.
