Their uniqueness lies in the addition of lime cream, which cuts through the sweet dough and introduces a fresh note. Additionally, they look incredibly delicious, enticing any sweet tooth.
Delicate cookies with lime cream
There's definitely a lot going on with these cookies. We have a sweet base, cream cheese filling, and a dollop of lime mousse. This trio is simply insanely delicious. Since I learned this recipe, regular delicate cookies have fallen by the wayside.
Ingredients:
Lime Mousse:
- 1/2 cup sugar
- 1/4 cup lime juice
- 2 teaspoons lime zest
- 2 eggs
- 2 tablespoons butter
- green food coloring (optional)
Cookies:
- 7 ounces softened butter
- 2/3 cup vegetable oil
- 1 cup powdered sugar
- 1 cup sugar
- 1/2 teaspoon baking soda
- 2 teaspoons salt
- 1 teaspoon baking powder
- 1/4 cup 18% cream
- 2 eggs
- 1 teaspoon vanilla extract
- 5 cups all-purpose flour
Cream Cheese Frosting:
- 8 ounces cream cheese
- 1/2 cup butter
- 2.5 cups powdered sugar
- 2 teaspoons vanilla extract
Instructions:
Step 1. Start with the lime mousse. Beat the eggs until light in color. Add the sugar, lime juice, and zest in a saucepan (remember to scald the fruit). Begin to heat everything, add the beaten eggs, and mix thoroughly. Add a few drops of food coloring and butter, and combine everything into a smooth mixture.
Step 2. Proceed to prepare the cookies. In a bowl, combine softened butter, powdered sugar, regular sugar, and vegetable oil using a mixer. Gradually add the eggs, continuing to mix. Add the vanilla extract, cream, baking soda, salt, baking powder, and flour, and combine everything.
Step 3. Use an ice cream scoop to portion the dough and place it on a baking sheet lined with parchment paper.
Step 4. Flatten the cookies using a glass. Place in a preheated oven at 355 degrees Fahrenheit for 12 minutes.
Step 5. Meanwhile, prepare the cream cheese frosting. Place the cream cheese in a bowl and mix with softened butter, powdered sugar, and vanilla extract.
Step 6. Spread the cream cheese frosting on the cooled cookies and add a dollop of lime mousse. Decorate with a piece of lime. Enjoy!
