Carnival is a wonderful opportunity to gather with friends. The desserts characteristic of this time, especially doughnuts, are delicious but quite calorie-rich. Therefore, preparing something lighter for the main course is a good idea, and a carnival salad fits the bill perfectly.

A neighbor highly recommended the carnival salad. It's quick to make, delicious, and pairs well with both cold cuts and cheese. Intrigued by her enthusiasm, I decided to try her recipe.

Chopped florets

The first ingredient of this salad will likely not surprise anyone. Everyone knows at least a few salad recipes featuring broccoli. However, what sets this one apart is that the vegetables are finely chopped. Prepared this way, they blend perfectly with other ingredients and the dressing, resulting in a delightful taste.

Boost immunity

Even though broccoli is available year-round, it's especially beneficial to incorporate it into your diet during the winter season. These vegetables are rich in vitamins that boost the immune system, enhance blood circulation, and positively affect the nervous system. Green florets are also a great source of fiber, supporting bowel function, and potassium, necessary for regulating blood pressure. Sulforaphane, a sulfur compound found in broccoli, has anti-cancer properties. Plus, broccoli is low in calories, making it ideal for both raw and cooked salads.

Just blanch them

How should you prepare broccoli for the carnival salad? The best way to retain their nutritional value and full flavor is by blanching them. You can do this either by tossing them into boiling water or steaming them under a cover. After this brief treatment, the broccoli will be tender and easy to chop finely, which is exactly what you need for this salad.

Carnival salad

Ingredients:

              
  • 1 pound of broccoli
  • 7 ounces of cooked or grilled turkey breast
  • 5 ounces of feta cheese
  • A few sprigs of dill
  • A few radishes
  • 2 hard-boiled eggs for garnish

For the dressing:

            
  • 3 tablespoons of olive oil
  • 1 teaspoon of lemon juice
  • 1/2 teaspoon of honey
  • 1 clove of garlic
  • Salt and pepper to taste

Preparation:

  1. Start by preparing the broccoli. Cut off the florets and immerse them for a few minutes in boiling salted water. Then drain, cool, and chop finely.
  2. Add finely chopped turkey meat to the prepared broccoli.
  3. Next, finely chop the feta cheese and grate the radishes.
  4. Finely chop the dill.
  5. Combine all the salad ingredients and mix thoroughly.
  6. Prepare the dressing by thoroughly mixing the listed ingredients and adding the olive oil at the end.
  7. Pour the dressing over the salad and serve it garnished with pieces of hard-boiled eggs.
