If you have leftover potatoes in the refrigerator from yesterday's dinner, instead of reheating them, you can create something special—delicious potato cakes with the addition of cottage cheese.

We don't always have the time or desire to make dumplings, so these potato cakes are a great alternative. Their delicate interior and crispy crust will make this dish a favorite in your home.

Recipe for potato cakes with cottage cheese

These delicious cakes require only a few simple ingredients that you surely have in your kitchen. Thanks to the addition of cottage cheese, we achieve a unique taste reminiscent of dumplings, but without the need for making and cooking the dough.

Ingredients:

  • 14 oz of cooked potatoes
  • 5 oz of cottage cheese
  • 1 egg
  • 2-4 tablespoons of all-purpose flour
  • A pinch of nutmeg
  • Salt and pepper to taste
  • Oil for frying

Preparation step-by-step:

  1. Potatoes: Peel and chop the potatoes, then cook them in salted water until soft. After draining and drying, mash them or press them through a ricer. Allow them to cool completely.
  2. Potato mixture: Add crumbled cottage cheese, an egg, and 2-3 tablespoons of flour to the prepared potatoes. Mix everything thoroughly until the mixture is uniform. Season to taste with salt, pepper, and a bit of nutmeg to enhance the flavor of the potatoes and cottage cheese.
  3. Shaping the cakes: Form the mixture into small, flattened cakes with your hands. Coat each in flour to achieve a crispy crust when frying.
  4. Frying: Heat a small amount of oil in a pan. Fry the cakes for 3-4 minutes on each side until they become golden. After frying, place them on a paper towel to remove excess oil.

Potato cakes with cottage cheese are a simple and tasty dish that will surely appeal to the whole family. They are an excellent way to use leftover potatoes and create a delicious dinner.
