For the cake:

  • 1 3/4 cups all-purpose flour
  • 11 tbsp butter

  • 4 egg yolks
  • Pinch of salt

  • Pinch of salt

  • 2 cups heavy cream

Preparation:

  1. In a bowl, combine the flour, butter, confectioners' sugar, egg yolks, and salt. Quickly knead the dough, form it into a ball, and chill in the refrigerator for 30 minutes. Roll out and bake at 355°F for 15 minutes.
  2. Beat the egg whites with salt until stiff, gradually adding sugar until the mixture is glossy. Spread the meringue on parchment paper and bake at 300°F for 45 minutes.
  3. Heat the cream in a saucepan. Add the chocolate and butter, stirring until the mixture is smooth. Cool and chill in the refrigerator, then whip with a mixer until fluffy.
  4. Spread the preserves on the cooled cake base, cover with a layer of cream, top with the meringue, and decorate with toasted almonds.
