King oyster risotto recipe

King oysters lend their exquisite flavor to salads, pasta, and rice dishes. Here is a simple recipe for king oyster risotto that you can prepare at home:

- 1 cup of Arborio rice,

- Approx. 3 cups of vegetable broth,

- Onion,

- 2 cloves of garlic,

- Approx. 1/2 pound of king oysters,

- 1/2 cup of white wine (optional),

- Salt, pepper to taste,

- A few spoons of grated parmesan (or optionally mozzarella),

- Rapeseed oil for frying,

- 2 tablespoons of butter.

Heat the oil in a pan, then add the finely chopped onion and garlic. Add the chopped king oysters and fry until they start to turn golden. Next, add rice and stir-fry until it becomes translucent.

Pour the wine (or water) in and cook until completely evaporated. Afterward, add the broth gradually, stirring each time until the rice absorbs the liquid. Continue this process until the rice is soft, yet still al dente.

Season with salt and pepper, then mix in the parmesan (or mozzarella if you prefer). Finally, stir in two tablespoons of butter, then cover and let it rest for two minutes.
