The base of the salad is arugula, also known as garden rocket. This leafy green belongs to the mustard family but is nowadays mostly associated with salads. It has a slightly peppery flavor, with older arugula tasting even spicier due to its high concentration of sulfur-containing amino acids, which have bactericidal properties.

Arugula is an excellent source of vitamins and minerals, including vitamins A, C, and K and B-group vitamins. This plant is a rich source of iron, which helps combat anemia and strengthens the immune system and folates, which are essential for pregnant women. A deficiency in these compounds is associated with an increased risk of neural tube defects in babies, such as cleft lip and palate or Down syndrome. An adequate dose of these nutrients also helps prevent anemia, nervous system disorders (like hyperactivity, difficulty sleeping, and memory problems), depressive states, and digestive ailments.

Equally valuable are sweet potatoes, the next ingredient in our salad. They are one of the richest vegetable sources of vitamin E, a powerful antioxidant that strengthens the immune system and neutralizes the harmful effects of free radicals, which are responsible for tissue damage, accelerating the aging process, and the development of cancer and cardiovascular diseases.

Sweet potatoes are a treasure trove of carotenoids, compounds that play a crucial role in maintaining vision. Mainly, lutein, which protects our eyes from cataracts and macular degeneration, filters harmful "blue light," and helps prevent cardiovascular diseases lung cancer, and supports proper fetal development.

The value of the salad is further enhanced by feta, the famous Greek cheese with a crumbly texture and salty-spicy taste. Made from sheep's milk and sometimes with a small addition of goat's milk, feta is a rich source of valuable proteins, calcium, and phosphorus—microelements that positively affect bones, teeth, and the muscular and cardiac systems.

Salad Recipe

Start by peeling and dicing a large sweet potato. Coat it in olive oil, sprinkle with salt and freshly ground pepper, then bake for 30-40 minutes in an oven preheated to 375°F.

Meanwhile, sauté chopped onion and diced fennel (1/4 cup) in olive oil until translucent. Let all warm ingredients cool, then mix in a bowl with fresh arugula (2 cups) and dried cranberries (2 tablespoons). Sprinkle with crumbled feta cheese (2-3 tablespoons) and drizzle with balsamic vinegar and freshly squeezed lemon juice. If necessary, season the salad with salt and pepper.
