We eat chicken very often. And let's be honest, sometimes we just run out of ideas for it. Recently, we had drumsticks, whole roasted chicken, and fried fillets. So, maybe you can prepare chicken rolls now? They are delicious and not at all labor-intensive.

Chicken is the most popular type of poultry. We often choose fillets because making a meal out of them doesn't take much time. If you decide to fry them in breadcrumbs or grill them, dinner will be ready very quickly. Chicken rolls seem like a rather labor-intensive dish, but not necessarily so.

The rolls will be tender

Poultry meat is a great source of high-quality protein and has a lot of vitamins. It is easy to digest and healthy. What can you criticize about it? Maybe just that it can be too dry, especially when prepared traditionally. Rolls are a good way to avoid this. The stuffing will make the meat soak up the juices from the vegetables or cheese. It will be much softer, delicate, and almost melting.

Use seasonal vegetables

What to stuff the rolls with? It really depends on individual preferences because many ingredients go well with poultry meat. You can use vegetables, fruits, cheeses, groats, or mushrooms. During tomato season, it is worth using these vegetables. Adding mozzarella to them will give the rolls an Italian style. It is also worth seasoning them with basil. This will be a light and delicious dinner.

Italian-style chicken rolls

Ingredients:

  • 4 chicken breasts
  • 2 tomatoes
  • 3.5 oz grated mozzarella
  • a few sprigs of basil
  • 2 fl oz natural yogurt
  • 2 teaspoons lemon juice
  • salt, pepper, garlic to taste

Preparation method:

  1. Cut the chicken breasts in half thickness-wise and pound the cutlets with a tenderizer. Sprinkle them with salt and pepper and rub with garlic and herbs. Set aside to marinate.
  2. Cut the tomato, remove the seeds, and chop the flesh into small cubes. Mix it with the grated cheese and chopped basil.
  3. Mix the yogurt with the lemon juice and season to taste.
  4. Place a spoonful of stuffing on each chicken cutlet and roll tightly. Secure the rolls with toothpicks. Place them loosely in a greased baking dish.
  5. Brush each roll with yogurt sauce on top.
  6. Preheat the oven to 340°F and bake for 40 minutes.
