Traditional Doughnuts - A Recipe Echoing the Good Old Days

We're pleased to present a recipe for traditional doughnuts, just like Sister Anastazia made them. Doughnuts prepared using her method are exceptionally fluffy and minimally fatty. The best part? They stay fresh for a long time.

Ingredients:

  • 4.4 pounds (approximately 2 kilos) of flour,
  • 0.88 ounces (approximately 25 grams) of fresh yeast,
  • 1.5 cubes of margarine,
  • pinch of salt,
  • generous amount of sugar,
  • 15 egg yolks,
  • 2.1 cups (approximately 1/2 liter) of milk,
  • 1 cup (approximately 1/2 cup) of spirits,
  • powdered sugar for dusting,
  • 1.06 quarts (approximately 1 liter) of oil for frying,
  • your choice of jam, jelly, or marmalade for filling.

Instructions:

  1. Sift the flour into a large bowl and crumble in the yeast. Add two tablespoons of sugar.
  2. Warm the milk and mix it into the flour. Make sure everything is well combined and cover the bowl with a cloth. Allow the mixture to rise for 15-20 minutes.
  3. Separately, beat the egg yolks with a pinch of salt and two tablespoons of sugar.
  4. Melt the margarine and once slightly cooled, add it to the dough along with the beaten egg yolks and spirits. Knead the dough and set aside for 1.5 hours.
  5. Afterwards, roll out the dough and cut out circles using a glass or cookie cutter.
  6. Place a teaspoon of your selected jam or jelly in the center of each circle.
  7. Enclose the jam with the dough and shape them into balls.
  8. Set these aside to rise for about another 40 minutes.
  9. In the meantime, heat the oil to approximately 360 degrees Fahrenheit.
  10. Carefully lay the doughnuts into the hot oil. Fry them for 5 minutes on each side.
  11. Once perfectly fried, transfer the doughnuts onto a plate lined with paper towels to drain excess oil.
  12. When they're cooled, sprinkle with powdered sugar and serve.
