Sultan's Daughter cake - recipe for a dessert with raisins
Sultana raisins are a real treat for those with a sweet tooth. Among other raisins, they are notable for their exceptional sweetness, lacking the typical tartness. This characteristic is why they are cherished by many. Sultanas often find their way into cheesecakes, fruitcakes, or the iconic PRL-era Sultan cream.
In this recipe, they are part of the glaze, enhancing the simple sponge and pudding cream. This dessert is made for adults as it includes the addition of rum. However, you can omit it to create a dessert for all ages.
Ingredients:
Sponge Cake
- 6 eggs
- 1.5 cups of sugar
- 1.5 cups of all-purpose flour
- 1/2 cup of potato starch
- 2 teaspoons of baking powder
- 3 tablespoons of cocoa powder
- 2 ounces of oil
- A pinch of salt
- Currant jam
Pudding Cream:
- 3 chocolate pudding packages without sugar
- 3 cups of milk
- 3/4 cup of sugar
- 1 package of vanilla sugar
- 9 ounces of soft butter
Glaze with Raisins:
- 14 ounces of raisins
- 2 cups of rum
- 3.5 ounces of milk chocolate
- 3.5 ounces of dark chocolate
- 3.5 ounces of butter
Preparation Method:
- Soak the raisins in rum and set aside for 24 hours. You can also replace rum with vodka.
- Separate the egg whites from the yolks and beat the whites to stiff peaks with a pinch of salt.
- Beat the yolks with sugar. Add flour, baking powder, and cocoa, and mix thoroughly, slowly pouring in the oil.
- Gently fold in the beaten egg whites.
- Pour the batter into a baking dish about 10 x 16 inches or a springform pan.
- Bake in an oven preheated to 340 degrees Fahrenheit for about 20-25 minutes until a toothpick inserted comes out clean.
- After baking, set aside to cool.
- Prepare the puddings according to the package instructions, adding sugar.
- Set aside to cool.
- Beat the butter until fluffy. Gradually add the cooled pudding, one tablespoon at a time.
- Break the chocolates and melt them in a water bath with butter.
- Drain the raisins and add them to the melted chocolate. Save the drained rum for later.
- Cut the cooled sponge cake in half.
- Soak with syrup or rum, spread with a thin layer of jam, and apply 2/3 of the pudding cream.
- Cover with the second sponge cake layer, apply the remaining pudding cream, and pour over the chocolate glaze with raisins.
- Refrigerate for a few hours to allow the dessert to set.
