Buttery rolls with chocolate pieces are common in many supermarkets, but their ingredients can be disappointing. Fortunately, you can easily make them at home. The homemade version is even tastier and richer in chocolate. Homemade brioche buns have a thin, golden crust that conceals a fluffy interior. You can add milk, dark, or white chocolate to the dough—I recommend using a variety of chocolates. I also like to add vanilla seeds from a whole pod to the yeast dough for a unique taste and aroma.

These rolls are best enjoyed fresh or the following day. To make the chocolate melty, warm them slightly in the oven or air fryer before serving.

Ingredients:

Starter

  • 1 oz yeast
  • ½ cup milk
  • 2 tablespoons sugar
  • 2 tablespoons all-purpose flour

Dough

  • 3 oz sugar
  • 3 egg yolks
  • 1 egg
  • 3.5 oz melted butter
  • 5-6 cups all-purpose flour
  • ⅔ cup milk:
  • 5 oz milk chocolate
  • 2 oz white chocolate
  • 2 oz dark chocolate
  • 1 vanilla pod
  • 1 egg yolk and 1 tablespoon milk for brushing

Instructions:

  1. Crumble the yeast into a bowl, add sugar, warm milk, and flour, and mix thoroughly.
  2. Set the starter aside for 15 minutes to rise.
  3. Melt the butter for the dough and let it cool.
  4. Beat the yolks and egg into a fluffy, light mass with the sugar.
  5. Add flour, melted butter, warm milk, vanilla seeds, and the prepared starter.
  6. Knead a smooth dough, slightly more fluid than traditional dough. This can be done by hand or using a kitchen mixer with dough hooks.
  7. Cover with a cloth and leave to rise for an hour.
  8. After this time, add diced chocolate and mix.
  9. Divide the dough into smaller portions and form balls.
  10. Place on a baking sheet lined with parchment paper, cover, and set aside for 20 minutes to rise.
  11. Brush the rolls with egg yolk mixed with a bit of milk.
  12. Bake in an oven preheated to 350 degrees Fahrenheit for about 20-25 minutes.
