I adore donuts in various forms and am always keen to try new recipes for these sweets. My current favorite is tiny donuts made with kefir. The fluffiness comes from baking soda, eliminating the need to wait for the dough to rise. This quick and straightforward recipe works wonders when unexpected guests arrive or when you're craving something sweet.
Recipe for Kefir Donuts
Kefir donuts are fluffy and light as clouds, all thanks to the addition of baking soda. They do not absorb excessive fat during frying due to the inclusion of a small amount of spirit. This alcohol evaporates during frying, so there's no need to worry about its effects.
Externally, they resemble cheese doughnuts because we make a small hole in the middle before frying. This allows for an even heat distribution during frying, promoting excellent donut growth in the pan.
Ingredients:
- 1 cup of kefir,
- 1 egg,
- a pinch of salt,
- 2 packets of vanilla sugar,
- approximately 4 cups of wheat flour,
- half a teaspoon of baking soda,
- 3 tablespoons of sunflower oil,
- 1 teaspoon of spirit.
Method:
- I pour kefir into a tall bowl, add vanilla sugar, egg, and a pinch of salt, and mix everything. The mixture should become well-aerated.
- I then add baking soda, oil, and spirit and mix gently.
- I sift the flour into the bowl and knead the dough until smooth. It should be pretty sticky.
- I divide the dough into two parts. I roll each of them to a thickness of about 0.4 inches on a surface sprinkled with flour.
- Using a glass, I cut out circles. In each circle, I cut out a small hole, for example, with the end of an aroma glass bottle or a wide straw.
- I pour oil into a deep pan and heat it.
- I fry the donuts on both sides until they turn golden brown.
- After removing from the pan, I place the donuts on a paper towel to absorb excess fat.
After the donuts have cooled, I decorate them with powdered sugar or sugar mixed with cinnamon
