Nothing warms you up better in winter than a bowl of hot, nutritious soup. Loaded with an abundance of ingredients - vegetables, herbs, and meat, it caters to a variety of tastes. No wonder my mom labels this dish as a "royal soup". You won't find such a wealthy variety of ingredients in other soups.
Ever tried a soup like this for dinner?
This soup aligns perfectly with the concept of using leftovers, since it can be made with a variety of ingredients, particularly vegetables. Alongside the ones suggested in the recipe, you can employ cauliflower or broccoli, celery, pumpkin, potatoes, even brussel sprouts. The processed cheese enhances the overall flavor, and the tiny meatballs add the perfect final touch.
The "Royal Soup", besides being a great winter warmer, is also very satisfying - potentially serving as both the starter and main course. Surprise your family with this unique dish - prepare a rich, regal soup. They'll definitely be back for more.
Meatball "Royal Soup": The Recipe
Ingredients
- 4.2 cups of broth,
- 1.1 lbs of ground meat,
- 2 onions,
- 2 carrots,
- 7 oz of green beans,
- 14 oz of mushrooms,
- 10.5 oz of cream cheese,
- 1 egg,
- 4 tablespoons of breadcrumbs,
- oil for frying,
- parsley or dill,
- salt, pepper.
Preparation:
- Add egg, salt, and pepper to the ground meat, along with breadcrumbs. Mix everything well, then shape small, walnut-sized meatballs from the mixture.
- Grate the carrots and onions using a coarse grater (or cut into small cubes - it's your call), and then sauté them in heated oil. Include mushrooms and sliced green beans. Sauté until the vegetables soften.
- Meanwhile, pour broth into a pot and warm over medium heat. Add the sautéed vegetables and prepared meatballs. Allow to simmer until the meatballs are thoroughly cooked.
- As a final step, add pieces of the processed cheese to the soup (consistently stirring it). Season with salt and pepper, and garnish with chopped parsley or dill before serving.
