Ingredients:

Slaw:

  • 1/2 head of white cabbage
  • 1 carrot
  • 1 medium onion (white or red)
  • 1 tablespoon chopped parsley (can be dried)
  • 1 flat teaspoon of salt

Dressing:

                
  • 2-3 tablespoons of mayonnaise or plain yogurt
  • 2-3 tablespoons of milk
  • 1 tablespoon of sugar
  • 1 tablespoon of white wine vinegar
  • Juice from 1/2 lemon
  • 1 flat tablespoon of sharp horseradish
  • A pinch of freshly ground pepper

Preparation:

            
  1. Finely shred the cabbage and place it in a large bowl. Add salt, mix, and let it stand for 10 minutes to soften.
  2. Grate the carrot using a coarse grater. Finely dice the onion, then add the carrot, onion, and parsley to the cabbage.
  3. In a separate bowl, mix all the dressing ingredients (mayonnaise or yogurt, milk, sugar, vinegar, lemon juice, horseradish, and pepper) until smooth.
  4. Pour the dressing over the vegetables and mix thoroughly to combine all the ingredients.
  5. Let it sit for at least 30 minutes in the refrigerator to allow the flavors to meld. Serve as a side dish to meats, fish, or grilled dishes.
