Holiday tartar sauce twist: Pickled mushrooms steal the show
For the holidays, I make tartar sauce with pickled mushrooms, which perfectly enhance its flavor. This sauce pairs well with herring and holiday pâtés. If you enjoy spicy flavors, feel free to add a hot pickled pepper. Use homemade preserves—such as pickles and fermented cucumbers—so you can save on holiday expenses.
The recipe for sauce with pickled mushrooms will appeal not only to those looking for ways to use up pantry jars but also to anyone who enjoys a simple and well-balanced dip. The sauce combines salty and sour flavors, and the addition of hard-boiled eggs gives it a thick and creamy texture. It’s perfect not only for the holidays but also as an addition to sandwiches on any other day of the year.

You can add pickled bay boletes or other mushrooms in vinegar brine to the sauce. Popular button mushrooms will also work. However, before you start chopping them into small cubes, drain them thoroughly from the brine. Otherwise, the sauce may become too runny and overly sour.
How to make sauce with pickled mushrooms for the holidays?
The classic recipe for tartar sauce often includes capers, but they are not needed in this version. Vinegar mushrooms ensure the sauce is tart enough. Thanks to juicy additions, it gives dishes lightness and vigor.
Ingredients:
- 1 jar of pickled mushrooms
- 2 fermented cucumbers
- 1 small onion
- 2 hard-boiled eggs
- 2 tablespoons of mayonnaise
- 2 tablespoons of 12% or 18% sour cream
- Half a teaspoon of table mustard
- 1 teaspoon chopped dill
- A pinch of sugar and a bit of lemon juice
Instructions:
- Boil the eggs until hard, then cool, peel, and chop them into small cubes.
- Drain the fermented cucumbers and pickled mushrooms from the brine. Chop them into small cubes as well.
- Finely chop the onion.
- Place all ingredients in a bowl. Add mayonnaise, sour cream, a bit of mustard, a pinch of sugar, and a few drops of lemon juice. Mix everything with chopped dill.
- Optionally, add finely chopped pickled pepper or chives, for example, from green onions.
