Herring delight: A healthy twist with French mustard
Although the season for festive herring has not yet started, my neighbor has already invited me over for this delicious fish. In reality, any occasion is a good one to enjoy herring. They are tasty and healthy; above all, you can prepare them differently each time.

Each of us has our favorite way of preparing herring. However, herring pieces simply covered in oil with onions are always a hit. Every year, I return to the layered salad with herring, beets, potatoes, and eggs, also known as the popular "shuba." Although classic recipes are delicious, we are always tempted to make them a bit differently. After all, we eat them quite often during the fall and winter seasons.
Fish strengthen immunity
Herring at this time of year is a very good choice because it contains omega-3 fatty acids, which are essential for the heart and nervous system. They help prevent bad moods, which the current weather encourages. Herring is also rich in calcium, phosphorus, selenium, magnesium, potassium, iodine, and vitamins, especially D and B12. It also has a lot of iron.
It's worth preparing these fish at least once a week. And when someone invites us "for herring," it's definitely not something to refuse. I visited my neighbor and tried herring in a delicious sauce. The recipe contains two types of mustard.
Whole mustard seeds
Regular table mustard is most often found at home. It's a very popular addition to hot dogs or sandwiches. However, the recipe for herring also requires French mustard. The mustard seeds are immediately visible. It's a coarse-grained mustard—the mustard seeds are not ground, as is the case with other types. It's moderately spicy, and the salty taste is mild as well.
Despite its name, French mustard does not come from France. Its history goes back to 1936 when the British brand Colman's introduced it to the market. This unique condiment gained popularity due to its mildness and sophisticated taste, which it owes to using unusual ingredients like white wine.
Not just for herring
Initially, French mustard was a popular addition to steaks in England. Over time, its unique taste made it very popular. The distinctive whole mustard seeds make French mustard stand out among other sauces. It's worth buying during your next grocery run and trying it with herring, and then using it for other dishes. It pairs well with meats, vegetables, and salads.
Herring in mustard sauce
Ingredients:
- 6 herring fillets in oil,
- 1 onion,
- 4 teaspoons of French mustard,
- 2 teaspoons of table mustard,
- 2 tablespoons of sour cream,
- 2 tablespoons of mayonnaise,
- 1-2 teaspoons of liquid honey,
- a pinch of curry,
- salt and pepper to taste.
Preparation:
- Drain the herring from the marinade and cut into small pieces. Peel and dice the onion.
- In a larger bowl, mix mayonnaise, sour cream, mustards, curry, salt, pepper, and honey.
- Transfer the herring to the bowl and mix. Cover the bowl and refrigerate, preferably overnight.
