Recipe for millet apple pie without sugar and flour

Ingredients:

  • 9 oz of millet
  • 4 apples – preferably sour, e.g., Gray Renette
  • 1 tsp of cinnamon
  • 1 tbsp of honey
  • 2 eggs
  • 8.5 fl oz of plant-based oat milk
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • 0.7 oz of raisins
  • a pinch of salt

Preparation:

  1. Rinse the millet under running water, then cook it in two cups of water with a pinch of salt for about 15 minutes until soft and all the water is absorbed. Set aside to cool.
  2. Wash, peel, and slice the apples thinly or grate them on a coarse grater. Mix with cinnamon and honey (or maple syrup). You can also add a handful of raisins for additional natural sweetness.
  3. In a large bowl, mix the cooled millet with eggs, plant-based milk, baking powder, and vanilla extract. Stir until you achieve a uniform consistency.
  4. Line a baking pan (approx. 9.5 inches in diameter) with parchment paper or grease with coconut oil. Pour half of the millet mixture into the pan, spreading it evenly. Place the apple layer on top, then cover with the remaining millet mixture.
  5. Bake in an oven preheated to 350°F for about 40-45 minutes until the top is lightly golden and crispy.
