Apple pie is a favorite cake in Poland, but its traditional version can often be heavy and calorie-dense. This version is not only tasty but also packed with nutrients that help maintain a healthy diet. Thanks to millet, the cake is light and delicate, and the apples add natural sweetness.

Recipe for millet apple pie without sugar and flour

This apple pie is a perfect solution for people on a diet, diabetics, and everyone who wants to reduce their intake of sugar and white flour.

Ingredients:

  • 9 oz of millet
  • 4 apples – preferably sour, e.g., Gray Renette
  • 1 tsp of cinnamon
  • 1 tbsp of honey
  • 2 eggs
  • 8.5 fl oz of plant-based oat milk
  • 1 tsp of baking powder
  • 1 tsp of vanilla extract
  • 0.7 oz of raisins
  • a pinch of salt

Preparation:

  1. Rinse the millet under running water, then cook it in two cups of water with a pinch of salt for about 15 minutes until soft and all the water is absorbed. Set aside to cool.
  2. Wash, peel, and slice the apples thinly or grate them on a coarse grater. Mix with cinnamon and honey (or maple syrup). You can also add a handful of raisins for additional natural sweetness.
  3. In a large bowl, mix the cooled millet with eggs, plant-based milk, baking powder, and vanilla extract. Stir until you achieve a uniform consistency.
  4. Line a baking pan (approx. 9.5 inches in diameter) with parchment paper or grease with coconut oil. Pour half of the millet mixture into the pan, spreading it evenly. Place the apple layer on top, then cover with the remaining millet mixture.
  5. Bake in an oven preheated to 350°F for about 40-45 minutes until the top is lightly golden and crispy.
  6. After baking, allow the cake to cool. Millet apple pie tastes best warm but is also delicious cold as a healthy dessert or snack. It can be served with natural yogurt or coconut whipped cream.

Why choose millet apple pie?

Millet apple pie is the perfect dessert for those who want to enjoy the taste of sweets without excess calories and sugar. Millet is easy to digest, gluten-free, and rich in B vitamins, iron, magnesium, and fiber. Apples provide natural sweetness and are a source of pectin, which aids digestion. Therefore, this apple pie is not only delicious but also healthy!

Additional tips:

  • Experiment with fruits: besides apples, you can add other fruits to the pie, such as pears, plums, or berries, to give it a variety of flavors.
  • Egg substitutes: if you want to make a vegan version, you can replace the eggs with chia seeds or flaxseed (1 tbsp seeds + 3 tbsp water per 1 egg), and honey can be successfully replaced with agave syrup or maple syrup.
  • Serving and decoration: millet apple pie can be served with natural yogurt, coconut whipped cream, or sprinkled with cinnamon and nuts.
