I instantly fell in love with this soup when I first tasted it. It quickly became a household favorite, charming even my discerning mother-in-law. The gyros soup has notably eclipsed the once-dominant goulash at gatherings.

Typically, gyros remind people of the iconic, layered salad, but it's transformed into a mouthwatering, hearty soup at my home. Each spoonful is bustling with aromatic spices, a mouthful of vegetables, and tender chicken breast chunks. It's the epitome of hearty and delectable.

Gyros Soup: A Proven Crowd-Pleaser

This gyros soup became my go-to dish for warming up festivities. Initially, my traditionalist mother-in-law viewed it with skepticism. One taste, however, and she was not only reaching for seconds but also requested the recipe.

Brimming with vibrant vegetables, juicy meat, and tangy feta cheese, this soup is a delight for the palate. What's more, it's incredibly simple to make. It offers comfort on chilly nights and quells the most persistent hunger pangs.

Ingredients:

- 1.1 lbs of chicken breast fillets
- 3 colored bell peppers (green, red, and yellow)
- 2 onions
- 3 cloves of garlic
- 8.8 oz of mushrooms
- 3.5 oz of corn
- 2 teaspoons of tomato concentrate
- Oil for sautéing
- Salt and pepper, to taste
- 2 teaspoons of gyros seasoning
- 2 teaspoons of sweet paprika
- 3.4 fl oz of heavy cream
- 6.3 cups of vegetable broth

Preparation:

1. Dice the onion and sauté it in a pan with some oil until translucent.

2. Cut the chicken fillets into bite-sized pieces and coat them with the gyros seasoning.
3. Add the seasoned chicken to the pan with the onion, include the minced garlic, and sauté the mixture. Once cooked, transfer everything to a large pot.
4. Slice the bell peppers (after deseeding them) and sauté for about 3 minutes before adding them to the pot.

5. Follow a similar process with the mushrooms: clean, slice, sauté, and add to the pot.

6. Add the pot's vegetable broth, tomato concentrate, corn, and remaining spices.

7. Let the soup cook for 20 minutes.
8. In the meantime, mix a ladleful of the soup broth with the heavy cream in a separate bowl. Then, slowly incorporate this mixture back into the pot, stirring well. Cook for an additional few moments.
9. Finalize the seasoning with salt and pepper to your liking and let the soup stand for about 10 minutes before serving.
Serve this steaming soup garnished with crumbled feta cheese in a bowl or a deep plate. It pairs perfectly with bread. Enjoy this comforting delight!
