Grilled zucchini: A quick and healthy summer dinner option
Salty cheese, aromatic herbs, and my favorite this year—grilled zucchini. With just a few ingredients, I can create a delicious dish that will appear in my home many times this summer. I recommend you do the same!
For as long as I can remember, I've had trouble coming up with ideas for a healthy dinner. I wanted dishes that wouldn't burden my stomach or give me heartburn but would taste good. Eventually, I had to accept that ham and ketchup toasts don't agree with my stomach, and I had to take decisive action. The question was: what to prepare? One of the ingredients that caught my interest back then was zucchini.
The first choice fell on zucchini pancakes. I still like them today, although I must admit that just thinking about finding an alternative to this dish relieved me. I decided to go with the flow: I cut the zucchini into rounds, grilled it, and added a few other ingredients. Suddenly, I realized I'd created the perfect dinner and an excellent addition to a family barbecue. I've made this dish numerous times and am relieved to say it has been enjoyed by me and other family members.

Grilled zucchini with cheese and herbs
Ingredients:
- 1 zucchini
- 7 oz of feta
- A handful of pine nuts (or other nuts)
- A bunch of parsley
- A bit of lemon juice
- Olive oil
- Dried rosemary
- Salt, pepper
Instructions:
- Wash the zucchini, then dry it and cut it into medium-thick slices.
- Brush the slices with olive oil and season with salt, pepper, and dried rosemary.
- Grill the zucchini on a grill pan. Alternatively, preheat an oven to 350°F and bake them for about 20 minutes.
- Drizzle the zucchini with lemon juice, then top with feta cheese, chopped parsley, and nuts. Ready to eat!
