For as long as I can remember, I've had trouble coming up with ideas for a healthy dinner. I wanted dishes that wouldn't burden my stomach or give me heartburn but would taste good. Eventually, I had to accept that ham and ketchup toasts don't agree with my stomach, and I had to take decisive action. The question was: what to prepare? One of the ingredients that caught my interest back then was zucchini.

The first choice fell on zucchini pancakes. I still like them today, although I must admit that just thinking about finding an alternative to this dish relieved me. I decided to go with the flow: I cut the zucchini into rounds, grilled it, and added a few other ingredients. Suddenly, I realized I'd created the perfect dinner and an excellent addition to a family barbecue. I've made this dish numerous times and am relieved to say it has been enjoyed by me and other family members.

Preparation is straightforward, and the full recipe for this zucchini dish is listed below. How will you use it? As a dinner idea, a daytime snack, or perhaps a side dish for grilled pork shoulder? You'll come up with something!
