Gingerbread reimagined: The festive cake with a flavorful twist

What cake is most associated with Christmas? The answers may vary, but the most traditional dessert is certainly gingerbread. We often wait for the holidays just to taste it, as it tastes best at this time.

The basic ingredients of gingerbread are flour, honey, and a set of aromatic spices. In ancient times, exotic spices were added, symbolizing wealth and high social status. Thanks to these additions, gingerbread was hard, decorative, and often served as ornaments on Christmas tables. Over time, the ingredients have slightly changed, but these baked goods remain associated with Christmas.

A cake that complements traditional dishes

Even if we forget about gingerbread all year, we regain an appetite for this aromatic, spicy baked treat during the holiday season. It's hard to imagine a table without it during Christmas. Its taste complements the traditional dishes we eat during Christmas Eve dinner. Therefore, it is often served as a dessert along with dried fruit compote.

It doesn't have to be matured gingerbread

There are many recipes for this baked good. You don't always have to opt for matured gingerbread, which requires a lot of work. You can choose a much simpler version. The success of gingerbread depends not only on the cake itself. The intense, multidimensional taste also comes from the add-ins. Gingerbread is traditionally layered with plum preserves, further enhancing its spicy notes.

A cream to add flavor to any gingerbread

The second filling traditionally used in gingerbreads is semolina cream. It’s a bit forgotten today, but it’s worth returning. Its delicate taste balances the aromas of gingerbread with a milky flavor. The texture is also interesting. Semolina is another name for farina. While it's hard to say its grains are detectable, the bake surely has three textures: a dense cake, moist aromatic preserves, and semolina cream. Although it's a traditional recipe, this is indeed how modern desserts are often composed. Semolina cream is also perfect for honey cakes.

Semolina cream for gingerbread

Ingredients:

  • 2 cups milk
  • 4-5 tablespoons of farina
  • 1 cup butter
  • 1 cup powdered sugar
  • Vanilla sugar or vanilla extract to taste

Instructions:

  1. Heat the milk in a saucepan, add the farina and cook for about 3 minutes.
  2. Set it aside to cool completely.
  3. Cream the butter until fluffy.
  4. Add powdered and vanilla sugar to the butter and continue to cream until the ingredients are combined.
  5. Finally, mix the cooled farina to create a smooth cream.
