Fresh flavors: Dill sauce transforms traditional herrings
The season for enjoying herrings with friends is quickly approaching. It's a time when we seek out recipes for these delicious fish. Recently, I've been relishing them with a green addition commonly associated with potatoes and sauce for meatballs. I've prepared them multiple times, and they never get boring.
Dill sauce can be served with meat dishes as well as vegetarian ones. It pairs excellently with a variety of foods, including salads, eggs, pasta, or poultry. Dill sauce can be served both warm and cold. In the latter form, it works wonderfully with herrings.

One way to make use of dill is to prepare herrings with this recipe. They will be aromatic, with a fresh hint, and incredibly tasty. It's best to prepare them the day before to allow the flavors to meld. These herrings taste perfect with bread.
Herrings in dill sauce
Ingredients:
- 6 salted herring fillets
- 2-3 pickles
- 5 tablespoons sour cream
- 4 tablespoons mayonnaise
- 1 teaspoon mustard
- 1 teaspoon lemon juice or wine vinegar
- A few sprigs of fresh dill
- Pepper to taste
Instructions:
- Soak the herring fillets (the time depends on their saltiness). Then, pat them dry with paper towels and cut into strips.
- Finely dice the pickles.
- Finely chop the dill.
- Mix the mayonnaise with the sour cream, mustard, lemon juice or wine vinegar, dill, and pepper.
- Add the sliced herring and pickles to the sauce and mix thoroughly.
- Transfer the herrings to a jar or a closed container. Place them in the refrigerator for a few hours.
