When the temperatures outside soar, most people avoid heavy, substantial meals. Instead, they prefer salads and raw vegetable dishes made from fresh, crunchy vegetables.

Raw vegetable dishes are ideal for lunch; many people can't imagine their main course without this crispy addition. This is especially true in summer when fresh vegetables are abundant. It's worth preparing simple yet delicious and, most importantly, healthy "gardener's salad." Its name comes from the fact that it can be quickly made from vegetables available at garden plots or market stalls.

Quick "gardener's salad." The perfect side for lunch

For this salad, you only need two medium-sized carrots, two green cucumbers, an onion, a bunch of radishes, half a lemon, dill or parsley, canola oil, and salt and pepper to taste.

First, prepare the vegetables. Peel and grate the carrots, and do the same with the radishes. Depending on your preference, you can grate them coarsely or finely. Wash the cucumbers thoroughly and cut them into slices. Dice the onion. Put everything in one bowl and mix well.

Simple dressing

Next, prepare a dressing using two tablespoons of canola oil, half a lemon, salt, and pepper juice. Season to taste, then pour the dressing into the bowl with the vegetables and mix thoroughly. Finally, add chopped parsley or dill, garnish with greens, and it's ready.

This delicious, healthy, and crunchy salad can be served as a side dish for lunch or eaten on its own. It pairs perfectly with both poultry and pork meatballs.
