Yogurt cake is a classic with its lightness, fluffy texture, and simplicity. It's perfect for afternoon coffee, family gatherings, or a quick dessert when guests arrive unexpectedly. With just a few basic ingredients you likely already have in your kitchen, you can create a bake that resembles a delicate cheesecake and fluffy sponge cake. Discover how easy it is to make this yogurt cake and treat yourself to a moment of sweet pleasure.

The secret to fluffy yogurt cake

The key to success is properly beating the egg whites until stiff and gently combining them with the other ingredients. The cake will be light and fluffy, like a cloud. A water bath is also beneficial, as it ensures even baking and prevents the cake from drying out.

Ingredients:

  • 16 oz natural yogurt (room temperature)
  • 5 eggs (room temperature)
  • 2 fl oz vegetable oil (e.g., canola)
  • 3 oz vanilla pudding mix or potato starch
  • 3.5 oz sugar
  • 2 tablespoons lemon juice
  • a pinch of salt

Preparation:

  1. Line a 9-inch pan with parchment paper. Additionally, secure the bottom with aluminum foil.
  2. Combine yogurt, egg yolks, oil, and pudding mix in one bowl. In another bowl, beat the egg whites with a pinch of salt until stiff, gradually adding sugar while continuing to beat. Finally, add lemon juice and gently mix.
  3. Gently combine the egg white mixture with the yogurt mixture using a spatula.
  4. Pour the batter into the prepared pan. Place it into a larger pan, then pour boiling water into the larger pan until it reaches halfway up the smaller pan. Bake at 350°F for about 30-40 minutes or until a toothpick comes out clean.
  5. After baking, leave the cake in the pan to cool completely.

Variations on yogurt cake

The basic yogurt cake recipe is simple, but you can modify it according to your tastes. Try adding to the cake:

  • Fruits: Fresh fruits (e.g., blueberries, raspberries, strawberries) or dried (e.g., cranberries, raisins) will add sweetness and aroma to the cake.
  • Nuts: Nuts, almonds, or coconut flakes will make the cake more filling and crunchy.
  • Spices: Cinnamon, cardamom, or nutmeg will give the cake a festive character.
  • Coffee or cocoa: For coffee or chocolate lovers, it's worth adding a tablespoon of instant coffee or cocoa to the cake.

Yogurt cake is a universal bake that works for everyday and special occasions. Its delicate texture and subtle taste will appeal to everyone. Grab natural yogurt and a few simple ingredients, and create a dessert that will captivate your loved ones!
