Fish sticks under scrutiny – What do they hide?

While fish are an excellent source of protein and healthy fats, fish sticks are a completely different story. This popular product often contains only trace amounts of actual fish meat. Instead, manufacturers use cheaper substitutes, such as ground bones, skins, and other fish by-products, which are then shaped into familiar sticks.

And what about the breading? Although crispy and tempting, it's a real calorie bomb and a source of harmful trans fats. Trans fats are generated during deep-frying and are closely linked to the development of heart disease, diabetes, and obesity. Additionally, the breading contains large amounts of salt, contributing to increased blood pressure and kidney strain.

Harmful substances in fish sticks – A health threat

Beyond trans fats and excess salt, fish sticks may also contain other harmful substances formed during production and thermal processing. This includes polycyclic aromatic hydrocarbons (PAHs), which are carcinogenic compounds capable of damaging DNA. PAHs are produced during frying and are also present in cigarette smoke and car exhaust fumes.
