Fairy-tale soft Christmas gingerbread cookies

Ingredients:

  • 8.8 oz of honey,
  • 5.3 oz of sugar,
  • 3.5 oz of butter,
  • 2 tablespoons of cocoa,
  • 2 tablespoons of gingerbread spice (homemade if possible!),
  • 21.2 oz of flour,
  • 0.5 oz of baking powder,
  • 2 eggs,
  • a pinch of salt.

Instructions:

  1. Place the butter in a pan on low heat and allow it to melt. Stir in honey, cocoa, gingerbread spice, and sugar. Heat gently, making sure not to burn the mixture, then set aside to cool.
  2. Once cooled, add in eggs, flour, baking powder, and a pinch of salt. Mix all the ingredients together until a dough forms. Transfer the dough into a bag and place it in the freezer for 30 minutes.
  3. Remove the dough from the freezer and roll it out until it's about 0.4 inches thick. Use cookie cutters to cut shapes out of the dough, place on a baking tray lined with baking paper, and bake in an oven preheated to 395 degrees Fahrenheit for 7-10 minutes. Let them cool before decorating with icing. Bon appétit!
