How to select the best asparagus? When buying, opt for asparagus that is firm and makes a squeaky sound when rubbed. The heads of green asparagus should be closed, and their ends should be moist.

To avoid purchasing a bitter batch of white asparagus, consider breaking off and tasting a piece. If the raw asparagus tastes quite bitter, it's unlikely that you'll be able to fully eliminate the bitterness with cooking.
