Experience Spanish culinary tradition with chef's tortilla de patatas recipe

Spanish cuisine is a delightful blend of diversity and deliciousness. It relies on seasonal produce and local ingredients, and the recipes are traditionally carried on to the subsequent generations. Each region boasts its signature dishes, some of which have gained fame internationally. A prime example is tortilla de patatas, or potato omelette. I was privileged to have received this recipe from a proficient chef.

Spanish cuisine elegantly combines simplicity with fascinating intricacies. The menu primarily features Mediterranean ingredients complemented with vibrant additions. Spaniards cherish every meal shared together - it's an esteemed tradition for them.

"Friendly gatherings and lingering dinners, where Spaniards savour not only their food but also the company, constitute an essential aspect of Spanish culinary culture," shares Paweł Perkowski, the chef of the "Bilbao" restaurant.

Making the Spanish omelette according to the head chef's method: The steps to create tortilla de patatas

In Spain, the tortilla de patatas is a part of the widely loved tapas or snacks. These can be enjoyed in small bites whilst exploring a medley of flavours. It can be served cold, cut into bite-sized pieces. Additionally, potato omelette is an excellent choice for a regular lunch dish - in such cases, it's often served hot, perhaps with a side of chorizo sausage.

Ingredients:

  • 2 medium potatoes,
  • olive oil,
  • onion, finely chopped,
  • 1.8 oz of sliced chorizo sausage,
  • 4 eggs,
  • ½ a bunch of fresh parsley.

Instructions:

  1. Peel the potatoes and slice them thinly. Simultaneously, peel and chop the onion finely. Also, slice the chorizo sausage.
  2. Fry the onion and potatoes in heated oil. Aim for them to soften, but avoid browning by reducing the heat to a minimum.
  3. Whisk the eggs in a large bowl, add the sausage, parsley, onions, and potatoes. Season the mixture with salt.
  4. Pour the mixture onto the pan and simmer it on low heat until it turns golden. Now, flip the omelette to the other side.
  5. Ensure the dish remains moist inside.
