These pastries are traditionally served during Christmas feasts in Scandinavian countries. This tradition can be easily adapted to a Polish context, with the primary difference being the form—achieved in Sweden, Finland, and Norway with special cookie cutters. But there's no need to worry if we don't have these specific molds, as our usual cookie cutters will serve just as well.

Ingredients for Scandinavian Cookies

  • 2 large eggs
  • 1.5 teaspoons of sugar
  • About 1 cup of milk
  • 1 cup of wheat flour
  • 1 – 2 tablespoons of potato starch (optional)*
  • Oil or lard for frying
  • Powdered sugar for dusting

Preparation Method for Scandinavian Cookies

  • Prepare the dough as if you were making pancakes. Adding potato flour will make the batter less runny and more compact, making the preparation of the cookies easier.
  • Heat the oil or lard in a thick-bottomed pot as if for doughnuts. Dip a chosen shape cutter in it using tongs. Pour dough into the mold and when it starts to float and brown slightly, remove from oil and gently pat dry with a paper towel.
  • These uniquely shaped cookies promise a crispier texture than traditional pastries. Dust them with powdered sugar and serve ideally while still warm.
