Fresh asparagus: these crunchy vegetables are a true treasure of nature, from which you can create many delicious dishes. One delightful option is a spring version of carbonara, poised to impress even the most discerning gourmets.

When asparagus starts to dominate the vegetable market, it signals that it's time for culinary experiments for me. I usually reach for them intuitively, visualizing what interesting dishes can be prepared. One day, the idea of creating a spring version of carbonara crossed my mind.

Spring flavors on your plate: Asparagus Carbonara

This version of carbonara is not only delectable but also very simple to prepare. The ingredients are easily accessible, making the dish incredibly aromatic and refreshing.

Ingredients:

  • 7 oz of spaghetti,
  • About 9 oz of asparagus,
  • 5.3 oz of grated Parmesan cheese,
  • 3 egg yolks,
  • A pinch of salt,
  • 4 tablespoons of pasta cooking water,
  • Olive oil (for frying),
  • A handful of grated Parmesan cheese (for serving).

Preparation:

  1. Wash the asparagus thoroughly and remove the tough ends. Cut them into small pieces and sauté in a hot pan with olive oil—season with salt to taste.
  2. While the asparagus is sautéing, cook the spaghetti according to the instructions.
  3. Add 4 tablespoons of pasta cooking water to the pan with asparagus and the cooked and drained spaghetti. Mix well.
  4. Mix the egg yolks with the grated Parmesan cheese in a small bowl until smooth.
  5. Transfer the egg yolk and Parmesan mixture to the pan with the asparagus and spaghetti. Stir well so the sauce evenly coats all the ingredients.
  6. Serve the asparagus carbonara sprinkled with freshly grated Parmesan cheese.

Tips:

  • Add a bit of black pepper to the sauce to enhance the flavor.
  • Asparagus carbonara also tastes cold, making it perfect for a lunchbox for work or a picnic.
  • For a vegan version, replace the egg yolks with silken tofu and add a bit of turmeric to achieve the yellow color.
