Ground cutlets with cottage cheese

While some add breadcrumbs to their ground meat and others prefer soaking a roll in milk, I opt for a unique ingredient—semi-skimmed cottage cheese. This addition not only enhances the cutlets' fluffiness and lightness but also ensures they stay unbelievably moist after frying. They practically melt in your mouth, prompting everyone to eagerly reach for more.

Ingredients:

  • 1.1 lbs of ground pork
  • 7 oz of semi-skimmed cottage cheese
  • 1 Kaiser roll
  • 1 egg
  • 1 onion
  • 1 clove of garlic
  • Seasonings: salt, black pepper, marjoram, ground sweet paprika, dried parsley, savory
  • Breadcrumbs

How to prepare:

  1. Finely chop the onion and lightly sauté it. Let it cool before adding it to the ground meat.
  2. Soak the Kaiser roll in cold water or milk for a few minutes, squeeze out the excess liquid, and add it to the meat.
  3. Introduce the egg, minced garlic, and crumbled cottage cheese to the meat mixture. Knead thoroughly by hand until the mixture is even. Season to taste.
  4. Form the cutlets, coat them in breadcrumbs, and fry in hot oil on both sides until they achieve a golden brown hue.
