Egg and broccoli spread offers an easy way to incorporate one of the recommended servings of vegetables with minimal effort.

It's an excellent way to add vegetables to your diet, especially if you're not a fan of their typical taste. Broccoli is rich in vitamins (C, K, A), minerals (potassium, calcium, iron), fiber, and antioxidants. Cooked broccoli keeps most of its nutritional value and is easier to digest than when it's raw. Additionally, this spread includes healthy ingredients like eggs, chives, and mayonnaise.

Choose mayonnaise with a good composition, preferably made with eggs and canola oil. You can also substitute natural or Greek yogurt to lower the calorie content.

Ingredients:

  • 1 pound of broccoli
  • 3 eggs
  • 1 clove of garlic
  • chives
  • 3 tablespoons of mayonnaise
  • 1 tablespoon of natural yogurt
  • salt and pepper to taste

Preparation method:

  1. Divide the broccoli into smaller florets and place them in boiling water. Cook for 2-4 minutes until the broccoli is al dente.
  2. Cool and mash it with a fork.
  3. Boil the eggs until hard, peel them, mash, and add to the broccoli.
  4. Add mayonnaise, natural yogurt, and garlic pressed through a garlic press. Season the mixture with salt and pepper.
  5. Mix everything thoroughly.

Serve the delicious broccoli and egg spread on sandwiches, toast, or in a tortilla. You can also add a portion of tuna or smoked salmon, as well as sprouts and tomato, to the sandwich. A healthy and colorful breakfast is ready to be enjoyed!
