Simple Recipe for No-bake Pudding Cake

This cake demands only a handful of ingredients which you will probably find in your kitchen.

Ingredients for the pudding cream:

                                          
  • 7 ounces of 82% butter,
  • 2 sugar-free vanilla or cream puddings,
  • 2 egg yolks,
  • 2.5 cups of milk,
  • 6 tablespoons of sugar,
  • A few drops of flavor of choice, e.g. almond or rum,
  • 30 cocoa petit beurre cookies,
  • 3.5 ounces white chocolate,
  • 4 tablespoons of 30% cream,
  • 1/2 cup of peanuts.

Process for preparing the pudding cream:

  1. In a pot with a sturdy base, heat all but 1/2 cup of the milk. Combine the remaining milk with puddings, sugar, and yolks. Mix until smooth.
  2. Bring the milk to a boil, pour the pudding mixture gradually, and stir until boiling. In case lumps form, don't panic. Vigorous stirring would make the mass smooth.
  3. Once the pudding is prepared, please remove it from the heat, transfer it to a bowl, cover it with plastic wrap to touch, and leave it to cool at room temperature.
  4. The butter should also be at room temperature. Beat the butter until fluffy in a mixer bowl. Subsequently, in 3-4 phases, mix in the pudding mixture with the almond or rum flavor. Blend only until the ingredients are combined, avoiding overmixing.

Arrange a layer of cookies at the bottom of a pan, spread half of the cream over the cookies, and then arrange another layer. Spread the rest of the cream on top. Place the cake in the refrigerator for several hours to become firm.

Prepare the glaze by melting the chocolate with the cream in a water bath. Pour the glaze over the cake and garnish with a sprinkle of peanuts.
