Ingredients:

  • 7 oz of all-purpose flour
  • 3.5 oz of sugar
  • 2 eggs
  • 3.5 fl oz of oil
  • 3.5 fl oz of milk
  • 3 tablespoons of cocoa powder
  • 1 teaspoon of baking powder
  • 3 bananas
  • 8.5 fl oz of heavy cream
  • 1 tablespoon of powdered sugar

Preparation:

  1. In a bowl, mix the flour, sugar, cocoa, and baking powder. Add the eggs, oil, and milk, then mix thoroughly until smooth.
  2. Transfer the batter to a baking pan lined with parchment paper and bake at 355°F for about 25–30 minutes or until a toothpick comes out clean.
  3. After baking, let the cake cool.
  4. Whip the heavy cream with powdered sugar until stiff.
  5. Peel and slice the bananas into slices or halves.
  6. Gently scoop out a small portion of the cooled cake to create a hollow, then fill it with banana slices.
  7. Top with whipped cream and chocolate, but do not shape it into the characteristic mound, which speeds up dessert preparation.
  8. Crumble the previously scooped-out cake pieces and sprinkle them on top.

Additional Tips:

  • For an even moister cake, you can soak it with a bit of coffee or lemon juice before adding the bananas and whipped cream.
  • Instead of baking a chocolate cake, you can use chocolate cookies.
  • The cake tastes great when served immediately, but if you leave it in the fridge for a few hours, the cream will set better, and the flavors will meld.

What is a molehill cake?

The molehill cake is a popular dessert named after its characteristic appearance—it resembles a small mound of earth like the ones moles create. Its classic version consists of a fluffy chocolate cake with a scooped-out center, creating space for creamy filling and bananas. The scooped pieces of cake are crumbled and sprinkled on top, creating a mound effect.

The name "molehill cake" comes from the fact that the finished dessert, indeed, looks like a mound of earth left behind by moles. Thanks to this "earthy" form and dark color, the cake resembles a natural mound, giving it an original, playful appearance.
