Easy egg salad: Delicious breakfast in minutes
Egg-based breakfasts are among my favorites. I often prepare them soft, scramble them, or make an omelet. However, that's just the beginning of the possibilities. Besides classic dishes, there's always something new to try. Recently, I prepared a simple salad.
Do egg breakfasts take more time than making sandwiches? Should they be saved for the weekend? Not necessarily. In the case of this salad, that doesn't apply. Just cook the eggs in the evening, and in the morning, add a few ingredients to them. It doesn't take much time at all.
Prepare in advance
You can not only cook the eggs in advance but also peel and finely chop them. In the morning, add finely chopped pickles, ham, and chopped chives or dill. Finally, season with mayonnaise, salt, and pepper. The salad is ready, and the preparation is remarkably quick. It tastes great with fresh bread.
Why eat eggs for breakfast?
Nutritionists say it's worth reaching for eggs at any time of day, but in the morning, they have a special effect. They provide us with a significant amount of protein, adding energy and satisfying hunger for a long time. This significantly reduces the tendency to snack before the next meal. Moreover, eggs are an excellent source of vitamins and minerals.
Quick egg salad for breakfast
Ingredients:
- 4 hard-boiled eggs
- 2 pickles
- 1 tablespoon chopped dill
- 2 tablespoons mayonnaise
- Salt
- Pepper
- Lamb's lettuce or arugula for serving
Instructions:
- Peel the eggs and chop them coarsely.
- Cut the pickles into small cubes.
- Add dill and mayonnaise to the eggs and pickles. Mix the ingredients and season the salad to taste with salt and pepper. Serve with arugula or lamb's lettuce.
